Here are all the ingredients (my changes: I always use brown rice instead of white, and I did not use any cilantro - I'm sure the cilantro would have been good though! Also, I added a little more cheese than it called for.)
Very simple, one dish recipe. Just had to flip the chicken about half way through.

It would have been a one dish dinner, but I was trying to get it made, then had to go pick up my son from school and go to a play date, so I had to put it in another dish to refrigerate. That's why it looks a little messy.

I'm not sure how I got here...but, I need SIMPLE cooking stuff. Really, I suck in the cooking department, and you'd think at 43, having raised 5 kids, I'd have it figured out by now, but I don't! Anyway, this looks like something that not only would I make, but the people in my house would actually approve of after I do. They are not picky, I just suck that bad. Anyway, I'm curious though, you don't have ANY GREEN on that plate! GASP!!! Must have greenery on there, roughage, vitamins, does important things for the body you know! LOL
